What is Étamage?

Étamage is the centuries-old French technique of hand-applying pure molten tin to copper cookware. Tin is heated to 450°F and hand-wiped onto the copper, creating a molecular bond. Unlike spray-on coatings that sit on top (and eventually flake off), tin fuses with the copper permanently. This is the same method used in professional French kitchens for 200+ years.

What is Kalai?

Kalai (कलई) is the traditional Indian art of hand-hammering and tin-lining copper vessels — a craft passed down through generations of artisan families. Our pans combine Indian Kalai craftsmanship for the copper body with French Étamage for the tin lining. We call it The Indo-French Technique™.

Cleaning & Maintenance

Hand‑wash your copper pan with warm water, a little mild soap, and a soft sponge, then dry it immediately with a cloth to prevent water spots or staining. Avoid dishwashers, steel wool, and harsh abrasives, which can damage both the copper exterior and the soft tin lining. If the outside dulls or develops spots, you can gently restore its shine with a lemon‑and‑salt rub or a dedicated copper polish, taking care not to scrub the interior tin. 

Always cook on low–to–medium heat and never preheat the pan empty on high, as excessive heat can soften or warp the tin. Store the pan fully dry in a low‑humidity spot, and if stacking, place a soft cloth or paper towel between pans to protect the surfaces.

Is tin lining safe? What about melting?

Tin is FDA GRAS for food contact. Used as cookware lining for 800+ years.

Yes, tin melts at 450°F/232°C. But you should never cook that hot. Optimal sautéing: 250–375°F. The temps where tin has a problem are the same temps where non-stick releases toxic fumes.

Cook on low-medium heat (copper’s conductivity makes this easy) and the tin lining serves you for years.

What about the handles getting hot?

Yes, the brass handle gets warm during extended stovetop use. True of any solid metal handle (cast iron, carbon steel). Use a kitchen towel or silicone cover.

Why brass? Plastic degrades. Silicone wraps crack. Brass lasts forever and goes in the oven.
